Labor Day Menu

I must apologize up front as I failed to take any pictures of the wonderful meal we had this Labor Day.

Barbecue Ribs AND Chicken
Baked Beans
Cole Slaw
Potato Salad

The ribs and chicken were out of this world - no way can you get something that good at any restaurant; the beans were terrific; the cole slaw was okay, certainly not the best I've ever made; the potato salad is always, in my opinion, better the next day - but it was good.

I hope everyone out there in the blogging world had an equally wonderful holiday weekend. :)

Grilled Chicken Salad

This IS my creation.  I know there are way too many variations for grilled chicken salad out there.  This is mine. 

Ingredients included:  a mix of romaine and spring/herb baby greens, hard boiled egg, grilled chicken marinated in a sun-dried tomato basil marinade, red onion, grape tomatoes, radishes, beets, crispy bacon, croutons, and dressing of choice. 

I hope I didn't forget anything; however, to each his own - ENJOY!

Salmon Patties with a Creamy Dill Sauce

I've never cared for salmon patties . . . until now. 

This recipe is fabulous!  I served them with whole green beans and brown rice, but hey, that's just me.



Remember, whatever you do, don't forget the creamy dill sauce.

Mexican Shepherd's Pie

 This is definitely a keeper.  My husband said it can take the place of 'taco night' any night.  He loved it!  He just said to me "I think I'm going to have to have that at least once a week, if we have that I will never have to go to another Mexican restaurant again, not by choice anyway."

Who would have thought that something so easy, so quick, and so inexpensive could be soooooo good.
